Farzad Golpayegani is an Iranian guiarrist who releases instrumental albums that have middle eastern influences, presumably Persian influences but I doubt anyone here could tell the difference.

Planet X is probably my favorite group of this genre. It's features a prog-metal all star lineup. Derek Sherinian's solo albums feature a lot of guest musicians and Tony Macalpine newest self-titled album is good. Kiko Loureiro new album "Sounds of Innocence" is good instrumental progressive jazz fusion based metal.
